Tarrerias-Bonjean, TB for friends, is an old company making knives in Thiers, one of the French oldest and most distinguished cuttlery cities. They claim to invest heavily into R&D, which I think plausible and is a welcome change in a sometimes conservative industry. In 2010, TB invented the EVERCUT, a way to laser-fuse some titanium carbide into the blade’s steel edge. Which is cool, if you ask me. They claim such a blade, if not abused, will stay sharp for 25 years. As far as I know, in 25 years they may as well have invented lightsabers or monomolecular wires, so maybe the Furtif Santoku is the last steel kitchen knife I’ll buy in this life… Wow.

Anyway, in 2013 TB issued a new series of Evercut knives, called Furtif, which means stealthy, because they look like a F117. To me, the santoku looks more like something you’d find into a Sega VirtuaFighting game circa 1991, but that’s just because I’m an aging geek. I’ve done some research and it really seems that these knives live up to the BS from TB marketing dept. (Aside from a problem with the coating of the first batch, an issue which seems to have been solved.) To be fair, I must say my local knive dealer hates the Evercuts. But his claims are a little too far out to be really convincing.

Anyway, I’ll tell you, for it looks like I know what I’ll ask to this red fat beardy hohoho bastard who’s seriously late for me this year.
